My husband and I became vegetarians in 1970 just after our first son was born, and we've been a vegetarian family since.  We love Italian food, and you'll see that influence in my recipes.  They often begin with olive oil and garlic.  We create a foundation for good health with nutrition, using whole foods and organic foods when they are available.  My nutrition clients often ask for healthy vegetarian recipes, so I'm including a few here.

Five years ago, my husband became allergic to dairy products, so I began cooking non-dairy meals with some organic eggs.  We have also become avid strength trainers, so when our bodies craved a higher protein diet to match the new physical demands, our diet changed again.

I see good nutrition as a moving target.  What your body likes will evolve and change with time.  Look at my nutrition papers for basic nutrition information, but meanwhile enjoy some of my favorite recipes. I'll post more as time goes on.
